Seriously, how cute are these little Groundhogs? Punxsutawney Phil would be so proud!! Actually my friend Jen posted on Facebook that she was making Groundhog Day cookies and I just had to see what I was missing. Luckily for me, she brought me a bag of them this afternoon and they are so adorable and they smell amazing, too!

So, according to Jen, these little gingerbread groundhogs are to be placed end up on a mound of ice cream for Groundhog’s Day. If the Groundhog sees its shadow, then a “shadow” of chocolate syrup will be required.
